An unintelligent wizard (or paladin)? (DND 5e)

I don't normally play these kind of PCs, but so far I've failed to find a game for my favored kind of character. Perhaps things could work better if I tried something different? Anyway, I've recently thought of two character concepts that I find interesting and fun to play. Both of them are meant to be dumb, and I mean actually dumb, with low intelligence. (8 or even less if possible, point buy doesn't allow to go lower).

1) A paladin of redemption. Quite idealistic and naive. Someone who believes you can  save everybody and that even the evilest of monsters can turn a new leaf. Would need to start at a level high enough to have the subclass, and in a world that actually could eventually support the ideals, instead of being set for failure.
2) An incompetent wizard. Slow, clumsy and easily confused, someone who only got through wizard academy by sheer luck and connections. I don't normally play wizards, as I don't really like the flavor, but playing an anti-wizard sounds like something I could get behind.

Also I'm normally not into solo games, but if it helps, so be it. -As long as it isn't dungeon crawl-.

I've always wanted to see an Oath of redemption paladin. And what do you think of a redempotion paladin starting at level 5 or 6? Or what do you think of the Articifer Wizard (not to be confused with the Artificer class) released in the Unearthed Arcana for Eberron? It's basically a wizard who can turn spell slots into magic items or temporary enchantments likes, potions, scrolls, turning normal equipment and ammmo into +1 or +2 equipment. So you could dump intelligence and still be effective by buffing the party and do more non-wizardly things.

I've been assembling a game that could go multiple directions: plague in a city, sci-fi vs fantasy, adventure on the high seas, gunslingers and psychics  vs knights and wizards, etc. I'm hoping for people who join to talk with myself and each other about what they want, what they can agree on, what they think of the direction I'm heading at the moment, and to do some world-building with me. My philosophy is that it's not my world and your story, it's our world and our story.
