Blood Bowl

Well - Blood Bowl is a turn-based game, so it's not terribly difficult to execute on this format. The most difficult aspect would be deciding on how to handle mapping. Depending upon the degree of comfort with mapping products (and the GM's willingness to deal with it) - one could use some cool imaging software to show a normal board and change the position of the player tokens with each move.
Alternatively - it could be played with no "GM", and instead each person could be the GM - to make the speed of player faster and simpler.
