Hector grew up dirt poor on the streets of Juarez Mexico dodging cartel violence and struggling to feed himself. All he could find to eat mostly were scraps and half spoiled produce, but he did his best to make it palatable. When he was 13 he crossed into the USA illegally and started bussing tables at a small restaurant to make a few dollars. He learned more and more about food preparation until he became head cook at the restaurant at 19. Under his supervision the restaurant flourished quickly becoming quite famous for it's amazing food and flair.
